Cheeseburger Soup - Yum Yum

Ok what is wrong with me? Do I live in a bubble? Yes I live in my studio for sure. Ok well I have never heard of cheeseburger soup. This recipe is easy and scrumptuous. I went to a friends house for lunch and she served this yummy soup with a wonderful slice of hearty farm bread. There was a snow storm on the horizon so the weather was cold and this soup was food for the soul. Our dessert was tiny little shots of heaven. The one and only mini Red Velvet Cake from PFChangs. Yummy and I can't say it enough. So if your looking for a hearty wonderful winter soup this is it!

Cheeseburger Soup
This soup is rich in which the ground beef is sauteed in butter with veggies and herbs prior to adding milk, cubes of cheddar cheese and sour cream.
  • 1/2 pound ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup chopped celery
  • 1 tsp. dried basil
  • 1 tsp. dried parsley
  • 4 tablespoons butter
  • 3 cups chicken broth
  • 4 cups cubed potatoes
  • 1/4 cup all purpose flour
  • 2 cups cubed cheddar cheese
  • 1 1/2 cups milk
  • 1/4 cup sour cream
In a large pot melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef until beef is brown. Stir in basil and parsley. Add broth and potatoes. Bring to a boil then simmer until potatoes are tender about 10-12 minutes. Melt the remainder of butter and stir in flour. Add the milk stirring until smooth. Gradually add milk mixture to the soup stirring constantly. Bring to a boil and reduce heat to a simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.
