This pumpkin bread is light, moist, and oh so yummy!
Ingredients:
4 medium eggs
2 cups sugar
1 ½ cups pumpkin
1 cup (2 sticks) butter, softened
3 ½ cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
½ teaspoon salt
½ teaspoon powdered ginger
½ teaspoon cloves
1 ½ cups walnuts
2 cups sugar

Directions:
1. Preheat oven to 375°F.
2. In a large bowl, cream eggs, sugar, pumpkin, and butter.
3. In another large bowl, sift together flour, baking soda, cinnamon, nutmeg, salt, ginger, and cloves. Add to egg mixture and stir until combined. Stir in walnuts.
4. Pour mixture into two greased 9-by-5-inch loaf pans. Bake 60 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and cool slightly.
